Ingredients
  

  • 2 cups (280 g) gluten free 1-to-1 flour blend
  • ¼ cup (50 g) granulated sugar
  • 1 tbsp baking powder
  • ½ tsp fine sea salt
  • 6 tbsp (85 g) cold unsalted butter, diced
  • 1 cup (140 g) frozen blueberries
  • ½ cup (120 ml) cold buttermilk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • ½ cup (60 g) powdered sugar
  • 1 to 2 tbsp fresh lemon juice

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment. Whisk flour, sugar, baking powder, and salt in a large bowl.
  2. Cut cold butter into the dry mix with a pastry cutter or your fingers until coarse crumbs form with a few pea-sized bits.
  3. Whisk buttermilk, egg, vanilla, and zest together. Pour into the flour mixture, add frozen blueberries, and fold gently just until combined.
  4. Pat dough into a ¾-inch-thick disk on the baking sheet, cut into 8 wedges, and separate them slightly.
  5. Brush tops with buttermilk and bake 16 to 19 minutes until golden. Cool on the pan 5 minutes.
  6. Whisk powdered sugar with lemon juice to a thick honey consistency. Drizzle over warm scones and serve.

Notes

Work quickly and keep everything cold. If the dough feels sticky when shaping, lightly flour your hands or press with parchment. Frozen blueberries right from the bag work best here.
