Ingredients
  

  • 2 cups gluten free all-purpose flour 1:1 blend
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg, room temperature
  • 3/4 cup whole milk, room temperature
  • 1/3 cup unsalted butter, melted and cooled slightly
  • 1/2 cup full-fat sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries

Method
 

  1. Preheat oven to 400°F (200°C) and line a 12-cup muffin tin. Whisk the flour, sugar, baking powder, and salt for 30 seconds.
  2. In a separate bowl, whisk the egg, milk, melted butter, sour cream, and vanilla until smooth, about 1 minute.
  3. Pour the wet mixture into the dry and stir with a spatula just until no dry flour remains, about 15 to 20 strokes.
  4. Gently fold in the blueberries with two or three turns of the spatula.
  5. Divide batter evenly among the muffin cups and bake for 18 to 22 minutes, until golden and a toothpick comes out with a few moist crumbs. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

These muffins stay soft at room temperature for up to 3 days. For the highest rise, use fresh baking powder and let the batter rest 10 minutes before scooping.
