- Season beef with salt and pepper. Sear in butter over medium-high heat in batches, 2 to 3 minutes per side. Set aside.
- Sauté mushrooms and onion in butter over medium heat until golden, 5 to 6 minutes. Stir in garlic.
- Sprinkle flour over vegetables and cook 1 minute. Add broth, mustard, and Worcestershire sauce, scraping up browned bits. Simmer 5 minutes until thickened.
- Remove pan from heat, stir in sour cream, and fold in seared beef with any juices.
- Serve over noodles, rice, or potatoes, and top with parsley.
Notes
For tougher cuts like round steak or chuck, simmer the sauce an extra 10 to 15 minutes after adding the broth until the meat is fork-tender, then stir in the sour cream off the heat. The sauce thickens as it sits, so you may want to loosen leftovers with a splash of broth.
