- Preheat oven to 375°F (190°C). Brown sausage with onion in a skillet over medium-high heat until no longer pink, about 5 minutes. Add garlic, cook 30 seconds, and season with salt and pepper.
- In a bowl, mix ricotta, egg, 1/4 cup Parmesan, Italian seasoning, salt, and pepper until smooth.
- Spread 1 cup marinara in a 9x13-inch dish. Layer half the dry pasta, half the ricotta mixture, 1 cup mozzarella, and half the sausage. Repeat layers with remaining pasta, ricotta, another 1 cup mozzarella, and remaining sausage. Pour remaining marinara and 1 cup water over the top; do not stir.
- Cover tightly with foil and bake 40 minutes. If pasta is not yet tender, re-cover and bake 5 to 10 minutes more.
- Remove foil, top with remaining 1/2 cup mozzarella and 1/4 cup Parmesan, and broil 2 to 3 minutes until bubbly and golden. Let stand 5 minutes before serving.
Notes
If your gluten-free pasta brand tends to absorb a lot of liquid, check halfway through the bake and add 1/4 cup more water if the dish looks dry. The resting time after broiling helps the casserole set so servings hold their shape.
