Ingredients
  

  • 1 cup gluten free all-purpose flour blend
  • 2 teaspoons baking powder
  • ¼ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons granulated sugar
  • 1 large egg
  • ½ cup milk
  • 2 tablespoons melted unsalted butter or neutral oil
  • 1 teaspoon vanilla extract
  • 1 cup finely diced apple
  • Vegetable or canola oil, for frying
  • ¾ cup powdered sugar
  • 2 to 3 tablespoons apple cider (or milk)
  • Splash of vanilla extract, for glaze

Method
 

  1. Whisk flour, baking powder, salt, cinnamon, nutmeg, and sugar together for about 30 seconds.
  2. In a separate bowl, whisk egg, milk, melted butter, and vanilla until smooth.
  3. Pour wet ingredients into dry and stir just until combined, then fold in diced apple.
  4. Heat 1 inch of oil to 350°F (175°C). Drop 2‑tablespoon mounds of batter into the oil in batches and fry 2 to 3 minutes per side until deeply golden. Drain on paper towels.
  5. Whisk powdered sugar with apple cider and vanilla to make a smooth glaze. Drizzle over warm fritters and serve right away.

Notes

A quick rest of 5 minutes for the batter before frying can help the texture if your flour blend tends to be gritty; just don’t let it sit longer than 15 minutes or the apples will release too much liquid.
