Gingerbread Man Cookies Recipe

Ingredients
  

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup packed dark brown sugar
  • 1 large egg, at room temperature
  • 1/2 cup unsulphured molasses
  • 1 tsp vanilla extract

Method
 

  1. Cream the butter and brown sugar until light and fluffy, about 2 minutes. Beat in the egg, molasses, and vanilla until smooth.
  2. Whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Gradually mix the dry ingredients into the wet mixture just until combined.
  3. Wrap the dough in plastic and chill at least 2 hours. Roll it out 1/4 inch thick between parchment, cut shapes, and place on lined baking sheets.
  4. Bake at 350°F (175°C) for 8 to 10 minutes until edges are set. Cool on the sheets for 3 minutes, then transfer to a wire rack to cool completely.
  5. Decorate cooled cookies with a simple icing made from powdered sugar and milk, adding sprinkles while the icing is wet.

Notes

The dough needs at least 2 hours of chilling time, not counted in the prep. You can make the dough a day ahead and leave it in the fridge overnight, which deepens the spice flavour.
