Ginger Molasses Cookies Recipe

Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/3 cup unsulphured molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon fine sea salt
  • 1/3 cup granulated sugar, for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream butter, 1/2 cup granulated sugar, and brown sugar until light and fluffy, about 2 minutes. Scrape down the bowl.
  3. Beat in molasses, egg, and vanilla until smooth, about 1 minute.
  4. Whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. Stir into wet mixture just until combined; do not overmix.
  5. Shape dough into 1 1/2-tablespoon balls. Roll each in the 1/3 cup granulated sugar to coat. Place 2 inches apart on sheets.
  6. Bake 10 to 12 minutes, until tops are crackled and edges set. Cool on sheet 5 minutes, then transfer to a wire rack.

Notes

If you like an extra spiced bite, add 1/4 teaspoon black pepper with the dry ingredients. These cookies stay soft in an airtight container for up to 5 days. For an even chewier texture, let them rest in the container overnight.
