- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Cream butter, 1/2 cup granulated sugar, and brown sugar until light and fluffy, about 2 minutes. Scrape down the bowl.
- Beat in molasses, egg, and vanilla until smooth, about 1 minute.
- Whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. Stir into wet mixture just until combined; do not overmix.
- Shape dough into 1 1/2-tablespoon balls. Roll each in the 1/3 cup granulated sugar to coat. Place 2 inches apart on sheets.
- Bake 10 to 12 minutes, until tops are crackled and edges set. Cool on sheet 5 minutes, then transfer to a wire rack.
Notes
If you like an extra spiced bite, add 1/4 teaspoon black pepper with the dry ingredients. These cookies stay soft in an airtight container for up to 5 days. For an even chewier texture, let them rest in the container overnight.
