- Preheat oven to 400°F. Brown ground beef in a skillet over medium-high heat, drain fat, stir in taco seasoning with 2 tbsp water, and cook 1 minute.
- Melt cheddar and milk in a microwave-safe bowl in 20-second bursts until smooth. Chop lettuce and tomato, pat tomato dry, and warm tortillas 10 seconds each.
- On a half-sheet pan, lay one tortilla. Spread seasoned beef in the center, leaving a 3-inch border. Drizzle cheese sauce on top, then add a single layer of tortilla chips.
- Place the second tortilla on top, then fold the bottom tortilla’s border up and over, pleating as you go to seal. Brush the top and pleats with vegetable oil.
- Bake 14 to 16 minutes until deep golden. Rest 3 minutes, slice into wedges, and top with lettuce, tomato, and sour cream. Serve immediately.
Notes
If the cheese sauce thickens before you drizzle it, stir in another teaspoon of milk and microwave for 10 seconds. The lettuce and tomato must be as dry as possible, or they’ll make the tortilla soggy underneath.
