- Preheat oven to 350°F (175°C). In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Whisk in the egg and vanilla until glossy.
- Switch to a spatula and fold in the flour, baking soda, and salt until just combined. Stir in the chocolate chips.
- Press the dough evenly into a greased 9-inch cast iron skillet. Scatter a few extra chocolate chips on top if you like. Bake for 18-22 minutes, until the edges are deep golden and the center looks just set but still soft.
- Let the cookie cool in the skillet for 10 minutes. Sprinkle with flaky sea salt, slice into wedges, and serve warm.
Notes
The cookie will keep cooking from the pan’s residual heat, so pulling it when the center still has a slight jiggle gives the fudgiest middle. Store any leftovers covered at room temperature for a day or in the fridge for up to four days.
