Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups powdered sugar
  • 2 to 3 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • black gel icing

Method

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Beat butter and sugar until fluffy, about 2 minutes, then beat in egg and vanilla.
  2. Whisk flour, baking powder, and salt together. Gradually mix into the wet mixture on low speed until a soft dough forms.
  3. Roll dough to 1/4 inch thick on a floured surface. Cut with a ghost cookie cutter and place 2 inches apart on prepared sheets.
  4. Bake 9 to 11 minutes until edges are just barely golden. Cool on the sheet 5 minutes, then transfer to a wire rack to cool completely.
  5. Whisk powdered sugar, 2 tablespoons milk, and vanilla until smooth, adding more milk if needed. Dip cooled cookies in glaze, let drip, then add black gel eyes and a mouth while wet.

Notes

If your kitchen is warm, chill the cut shapes for 15 minutes before baking to keep the ghosts from spreading. The glaze can be tinted with a drop of orange or purple food coloring if you want a different look.
