German Red Cabbage (Rotkohl) Recipe

Ingredients
  

  • 1 medium red cabbage, about 2 lbs, shredded
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, thinly sliced
  • 1 crisp apple, peeled, cored, and chopped
  • 1/4 cup red wine vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground cloves (or 4 whole cloves)
  • 1 bay leaf
  • 1/4 cup water

Method
 

  1. Melt the butter in a large pot over medium heat. Add the onion and apple; cook for 5 minutes until softened.
  2. Stir in the shredded cabbage, vinegar, brown sugar, salt, cloves, bay leaf, and water. Cook for 5 minutes, stirring occasionally.
  3. Reduce heat to low, cover, and simmer for 45 to 60 minutes, stirring now and then, until the cabbage is tender and the liquid is syrupy.
  4. Remove the bay leaf and any whole cloves. Taste and adjust seasoning with more salt, sugar, or vinegar. Serve warm.

Notes

This dish tastes even better the next day. Reheat gently over low heat, adding a splash of water if needed.
