German Red Cabbage Recipe

Ingredients
  

  • 1 medium red cabbage (about 2 lb)
  • 2 tbsp unsalted butter or neutral oil
  • 1 large yellow onion
  • 2 tart apples (such as Granny Smith)
  • 1/4 cup red wine vinegar
  • 2 tbsp brown sugar
  • 1 cup vegetable broth
  • 1 bay leaf
  • 4 whole cloves
  • Salt and freshly ground black pepper

Method
 

  1. Melt butter in a large pot over medium heat. Add the sliced onion with a pinch of salt and cook, stirring often, until soft and translucent, 5 to 7 minutes.
  2. Add the shredded cabbage and grated apple. Stir to coat and cook for about 4 minutes until the cabbage wilts slightly.
  3. Pour in the vinegar and sprinkle the sugar over the cabbage. Stir in the broth, bay leaf, and cloves. Bring to a simmer, cover, and reduce heat to low. Cook for 50 to 60 minutes, stirring once, until the cabbage is tender and the liquid is reduced to a thin glaze.
  4. Remove the bay leaf and cloves. Season with salt and pepper to taste, then spoon into a serving bowl and serve hot.

Notes

If you prefer a sweeter finish, stir in a spoonful of red currant jelly just before serving. Leftovers keep up to 5 days refrigerated and reheat beautifully. The dish develops even more flavor when made a day ahead.
