German Apple Pancake Recipe

Ingredients
  

  • 2 large apples (Granny Smith or Honeycrisp), peeled, cored, sliced ¼ inch thick
  • 3 tbsp unsalted butter, divided
  • ¼ cup light brown sugar, packed
  • ½ tsp ground cinnamon
  • 4 large eggs, room temperature
  • ⅔ cup all-purpose flour
  • ⅔ cup whole milk, room temperature
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 2 pinches of kosher salt

Method
 

  1. Heat oven to 425°F (220°C). In a 10 inch cast iron skillet over medium heat, melt 2 tbsp butter. Add apples, brown sugar, cinnamon, and a pinch of salt. Cook, stirring occasionally, about 5 minutes until apples are tender and syrupy. Transfer to a plate and wipe skillet clean.
  2. Combine eggs, flour, milk, granulated sugar, vanilla, and remaining pinch of salt in a blender. Blend 30 seconds until smooth.
  3. Return skillet to medium heat and melt remaining 1 tbsp butter, tilting to coat. Pour batter into hot skillet, scatter apples evenly on top, then immediately place skillet in oven. Bake 20 to 25 minutes until deeply puffed and golden. Do not open oven door.
  4. Remove from oven, dust with powdered sugar, slice into wedges, and serve hot.

Notes

Let eggs and milk sit at room temperature for about 20 minutes before starting; cold ingredients can keep the pancake from rising as high. The pancake deflates quickly once out of the oven, so bring it straight to the table.
