- In a small bowl, whisk the broth, soy sauce, rice vinegar, hoisin sauce, brown sugar, garlic, ginger, and red pepper flakes until the sugar dissolves.
- Pour into a saucepan over medium heat. Stir the cornstarch and cold water together until smooth, then whisk the slurry into the saucepan. Bring to a gentle simmer and cook for 5 to 7 minutes, stirring often, until the sauce is glossy and coats the back of a spoon.
- Remove from heat and pour the hot sauce over cooked crispy chicken, tofu, or shrimp. Toss to coat and serve immediately over rice.
Notes
The sauce thickens more as it sits, so if you are not using it right away, let it cool and thin it with a tablespoon of water or broth when reheating. For the best texture with fried chicken, toss and serve without letting the coated pieces sit, so the glaze stays shiny and the breading crisp.
