Garlicky Shrimp Scampi Pasta Bake Recipe

Ingredients
  

  • 1 lb linguine
  • Salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/2 cup dry white wine or vermouth
  • 1/4 cup fresh lemon juice
  • 1 lb large shrimp (21-25 count), peeled and deveined
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • Fresh parsley, chopped

Method
 

  1. Cook linguine in salted boiling water until just shy of al dente, drain, and reserve 1/2 cup pasta water.
  2. Melt 2 tbsp butter with olive oil in a large skillet, cook garlic and red pepper flakes for 1 minute, then add wine and lemon juice and simmer 2–3 minutes. Stir in remaining butter, season with salt and pepper.
  3. Add shrimp and cook until pink, about 2–3 minutes total. Remove from heat, toss with pasta and 1/4 cup reserved pasta water.
  4. Transfer to a buttered 9x13-inch dish, top with Parmesan and panko mixed with a drizzle of oil, and bake at 400°F (200°C) for 15–18 minutes until golden and bubbly.
  5. Rest 5 minutes, garnish with parsley, and serve hot.

Notes

Let the baked pasta sit for 5 minutes before serving so it sets a little and makes scooping easier. The shrimp cook gently in the oven, so don’t push the bake time much longer or they can turn chewy.
