Garlicky Lemon Herb Chicken Kabob Marinade Recipe

Ingredients
  

  • 1 1/2 lbs boneless, skinless chicken thighs
  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley, for garnish

Method
 

  1. Whisk the yogurt, oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper in a medium bowl until smooth.
  2. Cut the chicken into 1-inch chunks, add to the bowl, and toss to coat. Cover and refrigerate 30 minutes to 4 hours.
  3. Thread the chicken onto soaked wooden skewers, leaving a small gap between pieces.
  4. Grill over medium-high heat (400°F) for 5 to 6 minutes per side until charred and cooked to 165°F.
  5. Transfer to a platter, garnish with parsley, and let rest 2 minutes before serving.

Notes

Marinating time is not included in the prep or cook numbers above. For wooden skewers, soak them while the chicken marinates so they’re ready when you thread. If the outside chars too fast, move the kabobs to a cooler part of the grill until the inside catches up.
