Ingredients

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 3 large garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp black pepper
  • 1 tbsp unsalted butter
  • 1/4 tsp red pepper flakes (optional)
  • Chopped fresh parsley

Method

  1. Whisk soy sauce, brown sugar, half the garlic, 1 tbsp olive oil, black pepper, and red pepper flakes in a bowl. Add steak, toss, and set aside 2 tbsp of the marinade. Marinate at room temp for 15 minutes.
  2. Heat remaining 1 tbsp oil in a skillet over high heat. Sear the steak in batches, 2 to 3 minutes per side, until a deep crust forms. Transfer to a plate.
  3. Reduce heat to medium, add butter and remaining garlic to the skillet. Stir 30 seconds, then add the reserved marinade and simmer 1 to 2 minutes until thickened.
  4. Return steak and any juices to the skillet. Toss for 1 minute until coated. Remove from heat, top with parsley, and serve immediately.

Notes

For a deeper flavor, marinate the steak in the fridge for up to 2 hours and let it come to room temperature before cooking. The glaze clings best when you serve the bites straight from the hot pan.
