Garlic Soy Chicken Breast Stir Fry Recipe

Ingredients
  

  • 1 lb boneless skinless chicken breasts, sliced thin against the grain
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 4 garlic cloves, minced
  • 1 tbsp minced fresh ginger
  • 2 tbsp vegetable oil
  • 1 tsp sesame oil
  • 2 cups broccoli florets, small
  • 1 red bell pepper, sliced into strips
  • 2 green onions, sliced
  • Sesame seeds, for serving

Method
 

  1. Whisk the soy sauce, honey, rice vinegar, and half the garlic and ginger in a small bowl. Set aside.
  2. Pat the chicken dry and season with salt. Heat 1 tbsp oil in a large skillet over high heat. Sear the chicken in a single layer for 2 minutes, then stir-fry 1 to 2 minutes until cooked. Transfer to a plate.
  3. Add the remaining 1 tbsp oil to the pan, then the broccoli and bell pepper. Stir-fry about 3 minutes, until bright and charred in spots. Add the remaining garlic and ginger and cook 30 seconds.
  4. Return the chicken and any juices to the pan. Pour in the sauce and toss for 1 to 2 minutes until glossy and reduced. Off the heat, stir in the green onions and sesame oil. Serve over rice with sesame seeds.

Notes

If you prefer a thicker sauce, dissolve 1 tsp cornstarch in 1 tbsp water and add it with the sauce in step 4. Let it bubble for 30 seconds to activate.
