Method
- Whisk the soy sauce, honey, rice vinegar, and half the garlic and ginger in a small bowl. Set aside.
- Pat the chicken dry and season with salt. Heat 1 tbsp oil in a large skillet over high heat. Sear the chicken in a single layer for 2 minutes, then stir-fry 1 to 2 minutes until cooked. Transfer to a plate.
- Add the remaining 1 tbsp oil to the pan, then the broccoli and bell pepper. Stir-fry about 3 minutes, until bright and charred in spots. Add the remaining garlic and ginger and cook 30 seconds.
- Return the chicken and any juices to the pan. Pour in the sauce and toss for 1 to 2 minutes until glossy and reduced. Off the heat, stir in the green onions and sesame oil. Serve over rice with sesame seeds.
Notes
If you prefer a thicker sauce, dissolve 1 tsp cornstarch in 1 tbsp water and add it with the sauce in step 4. Let it bubble for 30 seconds to activate.
