- Boil the pasta in salted water until al dente, reserving 1 cup of the pasta water before draining.
- Pat the shrimp dry, season with salt and pepper, and sear in olive oil over medium-high heat for 2 minutes per side. Set aside.
- In the same skillet, melt the butter over medium-low, stir in the garlic and red pepper flakes for 30 seconds, then add lemon juice and ½ cup of the reserved pasta water. Simmer 1 minute.
- Return the pasta and shrimp to the skillet, toss with the sauce and parsley, adjusting with extra pasta water as needed. Serve immediately.
Notes
For the silkiest sauce, do not skip the pasta water. Its starch pulls the butter and lemon together into a light, glossy coat. If you prefer extra garlic punch, mince an extra clove and stir it in raw just before tossing.
