- Pat wings dry with paper towels, then toss with baking powder, salt, and pepper until evenly coated.
- Arrange on a wire rack over a foil-lined baking sheet. Bake at 400°F (200°C) for 25 minutes, flip, and bake another 20–25 minutes until deep golden and crackling crisp.
- Melt butter in a small saucepan over medium heat, add garlic and cook 1 minute. Remove from heat and stir in Parmesan and parsley.
- Toss hot wings in the garlic Parmesan butter, pile onto a platter, and garnish with extra Parmesan and parsley. Serve immediately.
Notes
Wings are best eaten right away while the skin is at its crunchiest. For gatherings, you can hold baked wings in a 200°F oven for up to 30 minutes before saucing. The baking powder is essential for crisp skin, so don’t skip it.
