Ingredients
Method
- Preheat oven to 425°F (220°C). Mix olive oil, garlic, oregano, thyme, paprika, salt, and pepper into a paste. Pat thighs dry and rub paste over all surfaces.
- Heat a large oven-safe skillet over medium-high with a thin slick of oil. Sear thighs skin side down in batches for 5 minutes until golden. Flip and sear second side for 2 minutes.
- Return all thighs to the skillet skin side up, or transfer to a baking sheet. Roast 18 to 22 minutes until internal temp reaches 165°F (74°C).
- Rest the thighs in the pan for 5 minutes, then slice against the grain and spoon drippings over the top. Serve warm.
Notes
These thighs are designed to give you a crispy skin straight from the oven, so they are best eaten right away. If you want to cook for meal prep, let them cool completely and then pack them skin side up so the crust stays intact as much as possible.
