- Cut cauliflower into florets, pulse in food processor until rice-sized, then squeeze dry in a kitchen towel.
- Heat 1 tbsp oil in a large skillet over medium-high heat, sauté garlic 30 sec until fragrant, then remove to a plate.
- Add remaining 2 tbsp oil, then the cauliflower, salt, and pepper. Spread in an even layer and sear without stirring for 2 min, then stir and cook 3 to 4 min until tender.
- Return garlic to the pan, add parsley, thyme, and lemon zest, and toss for 30 sec. Serve immediately.
Notes
If you want a stronger garlic kick, reserve a pinch of the raw minced garlic and scatter it over the top before serving. This dish comes together fast, so have all your ingredients prepped and ready before you heat the pan.
