Garlic Fried Rice Recipe

Ingredients
  

  • 3 cups cooked and cooled white rice
  • 6-8 cloves garlic, thinly sliced
  • 3 tbsp neutral oil
  • 1 tbsp soy sauce
  • ½ tsp salt
  • ¼ tsp white pepper
  • 2 large eggs (optional)
  • 2 scallions, sliced on a sharp diagonal

Method
 

  1. Heat oil in a large skillet over medium heat. Fry garlic slices until just golden, about 3-5 minutes, then remove with a slotted spoon and keep the oil in the pan.
  2. If using eggs, beat them in a bowl and pour into the garlic oil. Stir until softly set, about 1 minute, then remove to a plate.
  3. Turn heat to high, add cold rice, and press it into an even layer. Let it sit 45 seconds, toss, and repeat once. Fry until glossy and separate, about 5 minutes, then stir in soy sauce, salt, and white pepper.
  4. Return eggs to the pan, add half the scallions, and toss 30 seconds. Serve topped with crispy garlic chips and the remaining scallions.

Notes

Cold, day-old rice is the secret to separate grains. If your rice is a solid block from the fridge, break it apart with your hands before adding it to the pan so it fries evenly.
