Ingredients
  

  • 1 ½ lbs boneless skinless chicken thighs
  • ¼ cup olive oil
  • 3 tbsp fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp dried oregano

Method
 

  1. Whisk olive oil, lemon juice, garlic, salt, pepper, and oregano in a bowl until combined.
  2. Place chicken in a bag or dish, pour marinade over, and turn to coat. Refrigerate 30 minutes to 2 hours.
  3. Remove chicken from marinade, letting excess drip off. Heat a skillet over medium-high and sear the chicken for 6 minutes per side, until golden and cooked to 165°F (74°C).
  4. Let the chicken rest 5 minutes, slice against the grain, and spoon pan juices over the top.

Notes

If you are short on time, even 30 minutes in the fridge gives a noticeable garlic punch. The marinade also works on chicken breasts, but reduce the sear time to about 5 minutes per side so they stay juicy.
