Garlic Butter Sweet Potato Noodles Recipe

Ingredients
  

  • 2 medium sweet potatoes (about 1 lb)
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • Kosher salt and black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Pinch of red pepper flakes (optional)

Method
 

  1. Melt the butter in a large skillet over medium heat. Spiralize the sweet potatoes and set aside. When the butter is foamy, stir in the garlic and red pepper flakes and cook for 1 minute until fragrant.
  2. Add the noodles to the skillet, toss with the garlic butter, and spread into an even layer. Cook undisturbed for 2 minutes, then toss and cook 2 to 3 minutes more until tender with a little bite.
  3. Remove from heat, sprinkle with Parmesan, and toss to melt. Add parsley, black pepper, and salt to taste. Serve right away.

Notes

These noodles are best eaten hot right from the pan. If you need to hold them, keep them in a warm oven (200°F) for up to 10 minutes, but expect them to soften a little.
