- Bring a large pot of salted water to a boil and cook the spaghetti until al dente, about 8 to 10 minutes.
- While the pasta cooks, melt the butter in a large skillet over medium heat. Add the garlic and red pepper flakes and cook, stirring, until fragrant, about 1 minute.
- Reserve 1/2 cup pasta water, then drain the spaghetti. Add the hot pasta to the skillet and toss with tongs, adding splashes of pasta water until the sauce is glossy and coats the noodles, about 1 to 2 minutes. Season with salt and pepper.
- Divide among bowls, top with parsley and Parmesan, and serve immediately.
Notes
The sauce is at its best within minutes of tossing, so have your bowls and garnishes ready before you drain the pasta. If the pasta seems a little dry after sitting, revive it with another splash of warm water and a quick toss.
