Ingredients

  • 2 (6 oz) skin-on salmon fillets
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 lemon
  • Salt and black pepper
  • Chopped fresh parsley

Method

  1. Pat salmon dry, season with salt and pepper. Heat oil in a skillet over medium-high. Sear skin-side down 4 minutes, flip, cook 2 minutes, then remove to a plate.
  2. Reduce heat to medium-low. Add 1 tbsp butter and garlic, stir 30 seconds. Squeeze in lemon juice, add remaining butter, and swirl to melt.
  3. Return salmon skin-side up, spoon sauce over, and cook 1 minute until opaque and flaky.
  4. Plate the salmon, spoon over any remaining sauce, add lemon slices and parsley. Serve hot.

Notes

For medium doneness, remove the salmon at 125°F (52°C); it will climb slightly as it rests. The lemon slices are for serving, so add them after cooking to keep them fresh.
