Ingredients

  • 1 cup long-grain white rice, rinsed
  • 3 tbsp unsalted butter, divided
  • 3 garlic cloves, minced
  • 1 ½ cups low-sodium chicken or vegetable broth
  • ½ tsp kosher salt
  • 1 bay leaf (optional)

Method

  1. Melt 2 tablespoons butter in a medium saucepan over medium heat. Add garlic and cook, stirring, until fragrant and pale gold, about 1 minute.
  2. Stir in the rice and cook, stirring constantly, until the grains look slightly translucent and smell nutty, about 2 minutes.
  3. Add broth, salt, and bay leaf. Bring to a boil over high heat, cover, reduce heat to low, and simmer undisturbed for 15 minutes.
  4. Remove from heat, discard bay leaf, and let stand covered for 5 minutes. Uncover, add the remaining 1 tablespoon butter, and fluff with a fork. Taste and adjust salt before serving.

Notes

Rinse the rice well before you start so it cooks up fluffy rather than sticky. If you are using salted broth, cut the added salt in half and adjust to taste at the end. The 5-minute rest after cooking is included in the total time; the rice is still in the pot, not a separate step.
