Ingredients

  • 1 lb sirloin steak, thinly sliced against the grain
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 2 tablespoons honey
  • 1/4 cup BBQ sauce
  • 8 small flour or corn tortillas, warmed
  • To serve: finely chopped white onion, fresh cilantro leaves, lime wedges

Method

  1. Season the sliced steak with salt and pepper. Heat oil in a large skillet over medium-high. Sear beef in a single layer until browned, 2 to 3 minutes per side. Transfer to a plate.
  2. Reduce heat to medium. Melt butter in the same skillet, then cook garlic for 30 seconds. Whisk in honey and barbecue sauce and simmer 1 to 2 minutes until thickened.
  3. Return beef to skillet. Toss with sauce for 1 minute until coated and heated through.
  4. Divide beef among warm tortillas. Top with onion, cilantro, and a squeeze of lime. Serve immediately.

Notes

If your steak slices vary in thickness, pull them off the skillet as they finish cooking so thinner pieces stay tender. You can also set up a taco bar with extra toppings like sliced avocado or crumbled cotija cheese; the sauce is rich enough that a little something creamy or salty on top never hurts.
