Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1 1/2 lb), pounded to 1-inch thickness
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, cut into pieces
  • 4 cloves garlic, minced
  • 1/2 cup low-sodium chicken stock
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley

Method
 

  1. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5 to 6 minutes per side until deeply golden and internal temperature reaches 155°F (68°C). Transfer to a plate.
  2. Reduce heat to medium. Melt butter in the same skillet. Add garlic and stir constantly for 30 seconds until fragrant. Pour in chicken stock and lemon juice, scraping up browned bits. Simmer for 2 minutes.
  3. Return chicken and any juices to the pan. Spoon sauce over chicken and simmer for 2 to 3 minutes until chicken reaches 165°F (74°C) and sauce thickens slightly.
  4. Plate chicken, spoon pan sauce over, and garnish with parsley. Serve immediately.

Notes

Let the chicken rest for 5 minutes before serving to keep the juices locked in. If the sauce reduces too much, add a splash of chicken stock to loosen it.
