- Season chicken with salt and pepper. Heat oil in a large skillet over medium-high. Add chicken in a single layer, sear 3 to 4 minutes per side until golden and 165°F (74°C). Transfer to a plate.
- Reduce heat to low. Add butter to the skillet and let it melt. Add garlic and cook 30 seconds, stirring, until fragrant.
- Return chicken to the skillet, toss to coat in garlic butter, and cook 1 minute to warm through.
- Remove from heat. Toss with parsley and red pepper flakes if using. Serve immediately.
Notes
For the best sear, pat the chicken dry with a paper towel before seasoning. Leftovers keep well for a few days; reheat in a skillet with a small pat of butter to bring the sauce back to life.
