- Preheat air fryer to 400°F (200°C). Trim the stem end of the cabbage, remove any ragged outer leaves, and slice into 1-inch thick rounds, keeping the core in each slice.
- Stir together the melted butter, garlic, salt, and several grinds of black pepper. Brush both sides of each cabbage steak generously with the mixture.
- Place the steaks in a single layer in the air fryer basket and cook at 400°F for 12 minutes, flipping once halfway through, until the edges are deeply golden and crisp and the center is tender.
- Transfer to a plate, sprinkle with Parmesan and a squeeze of lemon, and serve right away while the edges are still crackly.
Notes
The outer leaves should get dark and almost charred — that’s where the flavor is. Don’t skimp on the salt; cabbage soaks it up. If you have smaller end pieces, pull them out a minute or two early so they don’t burn.
