Method
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a small bowl, whisk oil, milk, vanilla, and vinegar if using. Pour into dry ingredients and stir until a thick dough forms.
- Fold in the chocolate chips.
- Drop rounded tablespoons of dough onto the prepared sheets, spacing them 2 inches apart. Bake for 10 to 12 minutes until edges are set and tops crackled.
- Cool on the sheets for 5 minutes, then transfer to a wire rack.
Notes
The dough may seem a little soft, but it will firm up as it bakes. If you don’t have a wire rack, let the cookies cool completely on the baking sheet; they’ll just take a bit longer to set. For the deepest chocolate flavor, use Dutch-process cocoa powder.
