- Preheat the oven to 350°F (175°C). In a large bowl, whisk the sweet potato puree, almond butter, maple syrup, eggs, and vanilla until smooth.
- Stir in the cocoa powder, baking soda, and salt just until combined; a few small lumps are okay.
- Fold in the chocolate chips, then spread the batter into a parchment-lined 8x8 inch pan. Bake for 20 to 22 minutes, until the center is set and a toothpick comes out with moist crumbs. Cool in the pan for at least 10 minutes.
- Lift the brownies out using the parchment, slice into squares, and serve warm or at room temperature.
Notes
For the signature crackly top, be sure the eggs and sweet potato are fully blended before adding the dry ingredients. Natural almond butter with just nuts and salt gives the smoothest result, but peanut butter works well too and adds its own roasted note.
