Ingredients
Method
- Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper. Whisk the melted butter and 1 cup sugar, then whisk in the eggs and 1 teaspoon vanilla. Add the flour, cocoa, and salt; stir until just combined.
- Beat the cream cheese and 1/4 cup sugar until smooth and fluffy, then beat in the egg yolk and 1/2 teaspoon vanilla until silky.
- Spread two-thirds of the brownie batter in the pan. Dollop the cream cheese mixture on top, then the remaining brownie batter. Use a knife to swirl in figure eights for about 15 seconds.
- Bake for 25-30 minutes until a toothpick comes out with moist crumbs. Cool completely in the pan on a rack.
- Lift the brownies out using the parchment, slice into 16 squares, and serve.
Notes
The brownies need to cool completely before slicing; this takes about an hour at room temperature. For the cleanest cuts, chill them in the fridge for at least an hour after cooling.
