- Stir melted butter and chopped chocolate until smooth. Whisk in sugar, then eggs and vanilla. Mix in flour, cocoa powder, and salt just until combined.
- Beat softened butter with both sugars until fluffy. Beat in egg and vanilla, then stir in flour, baking soda, and salt. Fold in chocolate chips.
- Spread brownie batter in a lined 8x8-inch pan. Drop cookie dough on top and spread gently to cover.
- Bake at 350°F (175°C) for 28-32 minutes, until a toothpick comes out with moist crumbs.
- Cool in the pan for 30 minutes, then lift out and slice into squares.
Notes
For softer cookie topping and extra clean layers, let the bars cool completely at room temperature before slicing; chilling them briefly makes cutting even easier. If your cookie dough feels very soft, pop it in the fridge for 10 minutes while the oven heats.
