Method
- Preheat the oven to 350°F (175°C) and line an 8-inch square pan with parchment. Melt the butter and chocolate together in a heatproof bowl over simmering water, stirring until smooth. Set aside to cool slightly.
- In a large bowl, whisk the eggs and both sugars vigorously for 2 minutes, until pale and thick.
- Stir the melted chocolate mixture and vanilla into the egg mixture until smooth.
- Sift the flour, cocoa powder, and salt into the bowl. Add chocolate chips if using. Fold just until no dry patches remain.
- Scrape the batter into the pan and smooth the top. Bake for 25 to 28 minutes, until a toothpick comes out with a few moist crumbs.
- Cool completely in the pan, then lift out and slice into 16 squares.
Notes
For the cleanest slices, wipe the knife between cuts. The brownies get even fudgier overnight.
