Method
- Whisk together the melted butter and sugar. Add eggs and vanilla, then sift in cocoa powder, salt, and flour. Fold in chocolate chips.
- Spread batter into a parchment-lined 9x13-inch pan and bake at 350°F (175°C) for 20 to 22 minutes, until a toothpick comes out with moist crumbs. Cool completely.
- Lift out the cooled brownies and cut into 12 equal squares, about 3 inches each.
- Place a scoop of ice cream between two brownie squares, press gently, and freeze on a tray for 30 minutes. Wrap individually and freeze until firm, at least 1 hour.
- Unwrap, roll the edges in mini chocolate chips or sprinkles if you like, and serve straight from the freezer.
Notes
The brownies need to be entirely cool before filling. The freezing time (about 1 ½ hours total) is not included in the total time above; plan for that extra step. For the cleanest edges, trim the brownie block with a sharp knife before cutting the squares.
