Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp chia seeds
  • Pinch of salt
  • 1/2 cup milk
  • 1 to 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 2 tbsp mini chocolate chips, plus extra for topping
  • Nut butter for drizzling, optional

Method

  1. In a jar or bowl with a lid, stir together the rolled oats, cocoa powder, chia seeds, and salt.
  2. Pour in the milk, maple syrup, and vanilla. Stir thoroughly until no dry cocoa pockets remain. Cover and refrigerate overnight, or for at least 4 hours.
  3. In the morning, stir the oats and add a splash of milk if they’re too thick. Top with reserved chocolate chips and a drizzle of nut butter, and serve.

Notes

For a richer taste, stir a spoonful of almond or peanut butter directly into the oats before refrigerating. The mixture will thicken further as it sits, so make it slightly looser than you think you want if you plan to eat it after a full day in the fridge.
