Frito Taco Bake Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 tbsp taco seasoning
  • 8 oz can tomato sauce
  • 15 oz can black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups shredded cheddar cheese, divided
  • 2 cups Fritos corn chips
  • Optional toppings: diced tomatoes, sliced jalapeños, sour cream, fresh cilantro

Method
 

  1. Brown the beef and onion in a skillet over medium-high heat for 7-8 minutes, breaking up the meat. Drain fat, stir in garlic, and cook 30 seconds.
  2. Stir in taco seasoning, tomato sauce, black beans, and corn. Simmer for 5 minutes until thickened.
  3. Spread the beef mixture into a 9x13 baking dish. Layer with 1 cup cheese, then the Fritos, then the remaining 1 cup cheese.
  4. Bake at 375°F for 10-12 minutes until cheese is melted and chips are toasted. Let sit 2 minutes, then scoop and serve with toppings.

Notes

Assemble the beef filling up to a day ahead and refrigerate; bring it back to a simmer before layering. The Fritos stay crispiest right after baking, so add them just before the dish goes in the oven.
