Fried Shrimp Tacos Recipe

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 2 cups finely shredded green cabbage
  • ½ cup shredded red cabbage (optional)
  • 2 tbsp fresh lime juice, divided
  • ½ tsp kosher salt, plus more to taste
  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • ½ tsp baking powder
  • ¾ cup cold sparkling water or light beer
  • Vegetable oil, for frying
  • 8 small corn tortillas
  • ½ cup sour cream
  • 1 tbsp hot sauce
  • 1 small garlic clove, grated
  • Pinch of salt

Method
 

  1. Toss the cabbage with 1 tablespoon lime juice and the salt; set aside for at least 10 minutes.
  2. In one bowl, whisk flour, cornstarch, baking powder, and a pinch of salt. Stir in the cold sparkling water just until combined. In another bowl, mix sour cream, remaining lime juice, hot sauce, garlic, and a pinch of salt; refrigerate.
  3. Pat shrimp dry. Heat 2 inches oil to 350°F (175°C). Dip shrimp in batter, letting excess drip off, and fry in batches for 2-3 minutes until golden. Drain on a rack and season with salt.
  4. Warm tortillas, top with slaw, shrimp, and sauce. Serve immediately.

Notes

The slaw and sauce can be made up to a day ahead. Fry the shrimp just before serving for the best crunch.
