- Toss the cabbage with 1 tablespoon lime juice and the salt; set aside for at least 10 minutes.
- In one bowl, whisk flour, cornstarch, baking powder, and a pinch of salt. Stir in the cold sparkling water just until combined. In another bowl, mix sour cream, remaining lime juice, hot sauce, garlic, and a pinch of salt; refrigerate.
- Pat shrimp dry. Heat 2 inches oil to 350°F (175°C). Dip shrimp in batter, letting excess drip off, and fry in batches for 2-3 minutes until golden. Drain on a rack and season with salt.
- Warm tortillas, top with slaw, shrimp, and sauce. Serve immediately.
Notes
The slaw and sauce can be made up to a day ahead. Fry the shrimp just before serving for the best crunch.
