Fried Salmon Patties Recipe

Ingredients
  

  • 1 (14.75 oz) can salmon, drained
  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 2 tablespoons finely chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 3 tablespoons neutral oil, for frying
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon chopped fresh dill
  • Small pinch of salt

Method
 

  1. Drain the salmon, remove any large bones or skin if you like, and flake it into a bowl. Add the egg, panko, Dijon, Old Bay, parsley, and pepper. Stir gently until the mixture just holds together.
  2. Divide into 4 equal portions and shape into patties about 3 inches wide and 1/2 inch thick. Set on a plate.
  3. Heat the oil in a large skillet over medium heat until shimmering. Fry the patties for 4 minutes on the first side, flip, and cook 3 to 4 minutes more until deep golden and firm.
  4. Stir together the mayonnaise, lemon juice, dill, and a pinch of salt. Serve the patties hot with a spoonful of sauce and a lemon wedge.

Notes

Canned salmon is fully cooked; the soft, tiny bones are edible and add calcium. If they bother you, pick them out while flaking. For an even firmer patty, chill the shaped patties for 15 minutes before frying.
