Fried Rice Bowl Recipe

Ingredients
  

  • 2 cups cold cooked jasmine rice
  • 2 large eggs, beaten with a pinch of salt
  • 3 tbsp neutral oil
  • 3 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 3 scallions, sliced, white and green parts separated
  • 1/2 cup frozen peas and diced carrots
  • 2 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • Toasted sesame seeds for serving

Method
 

  1. Heat a wok or large skillet over high heat. Add 2 tbsp oil, then the white scallion parts, garlic, and ginger. Stir-fry 30 seconds until fragrant, then add peas and carrots and cook 1 minute.
  2. Add the cold rice, breaking up clumps. Pour in the soy sauce and stir-fry 3 to 4 minutes, letting the rice sit in the pan for 30 seconds at a time to crisp.
  3. Push the rice to one side. Pour the remaining 1 tbsp oil into the empty space, add the eggs, and scramble until set, about 1 minute. Stir the eggs into the rice.
  4. Remove from heat, drizzle with sesame oil, and toss. Spoon into bowls, top with scallion greens and sesame seeds, and serve immediately.

Notes

If you add cooked protein, stir it in during the last minute of cooking until just heated through. Fried rice is at its best the moment it hits the bowl, so have your toppings ready before you start cooking.
