Ingredients

  • 4 scoops vanilla ice cream
  • 2 cups cornflakes
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • 1 large egg white
  • Vegetable oil, for frying (about 2 cups)
  • Honey, chocolate syrup, whipped cream, and cherries for serving

Method

  1. Scoop ice cream into 4 balls, freeze on a parchment-lined plate for at least 2 hours until rock hard.
  2. Crush cornflakes into fine crumbs; mix with sugar and cinnamon.
  3. Dip frozen balls in beaten egg white, roll in crumb mixture, pressing to coat fully. Freeze 15 minutes.
  4. Heat 1 inch of oil in a deep pan to 375°F. Fry one ball at a time for 20-30 seconds, turning until golden. Drain briefly.
  5. Serve immediately drizzled with honey or chocolate, topped with whipped cream and a cherry.

Notes

The prep time is hands-on only; you'll need at least 2 hours and 15 minutes of freezing time total. For the best shell, make sure the ice cream is absolutely rock hard before frying.
