Fried Cod Recipe

Ingredients
  

  • 4 cod fillets (about 6 oz each)
  • 1/2 cup all-purpose flour
  • 1/4 cup fine cornmeal
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1 large egg
  • 2 tbsp whole milk
  • Vegetable or canola oil, for frying

Method
 

  1. Mix flour, cornmeal, paprika, garlic powder, salt, and pepper in one shallow dish. Beat egg and milk in another.
  2. Pat cod fillets dry. Dip each into the flour mixture, then egg wash, then flour mixture again. Shake off excess.
  3. Heat 1/2 cup oil in a large skillet over medium-high until shimmering, about 350°F (175°C). Fry fillets in a single layer for 3 to 4 minutes per side, until golden and fish flakes easily with a fork.
  4. Transfer to paper towels, sprinkle with salt, and serve hot with lemon wedges.

Notes

Serve as soon as the fish hits the plate so the crust stays noisy and crisp. If cooking in batches, keep the first fillets warm in a 200°F (95°C) oven while you finish frying.
