Fried Chicken Marinade Recipe

Ingredients
  

  • 1 cup buttermilk
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • 2 tsp hot sauce

Method
 

  1. In a medium bowl, whisk together the buttermilk, salt, black pepper, garlic powder, onion powder, smoked paprika, cayenne, and hot sauce until the salt dissolves.
  2. Place 3 to 4 lbs of chicken pieces in a zip-top bag or large bowl. Pour the marinade over the chicken, seal or cover, and toss to coat every piece.
  3. Refrigerate for at least 4 hours and up to 24 hours.
  4. When ready to fry, remove the chicken from the marinade, letting excess drip off, and place on a wire rack. Pat dry if you want an extra-crispy crust. Proceed with your breading and frying method.

Notes

Pat the chicken dry after marinating for a crispier fried crust. The marinade itself takes just 10 minutes to stir together. The hands-on time for marinating and prepping is included in the prep time. Marinating time is not counted in the total.
