Method
- In a medium bowl, whisk together the buttermilk, salt, black pepper, garlic powder, onion powder, smoked paprika, cayenne, and hot sauce until the salt dissolves.
- Place 3 to 4 lbs of chicken pieces in a zip-top bag or large bowl. Pour the marinade over the chicken, seal or cover, and toss to coat every piece.
- Refrigerate for at least 4 hours and up to 24 hours.
- When ready to fry, remove the chicken from the marinade, letting excess drip off, and place on a wire rack. Pat dry if you want an extra-crispy crust. Proceed with your breading and frying method.
Notes
Pat the chicken dry after marinating for a crispier fried crust. The marinade itself takes just 10 minutes to stir together. The hands-on time for marinating and prepping is included in the prep time. Marinating time is not counted in the total.
