Fried Cabbage with Sausage Recipe

Ingredients
  

  • 12 oz smoked sausage, sliced into rounds
  • 1 small head green cabbage (about 1½ lbs), cored and thinly sliced
  • 1 medium yellow onion, halved and sliced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • ½ tsp smoked paprika (optional)
  • salt and black pepper to taste
  • 2 tbsp water or chicken broth, as needed

Method
 

  1. Heat a large skillet over medium-high heat. Add the sausage slices in a single layer and cook for 4 to 5 minutes, turning once, until deeply browned. Transfer to a plate and set aside.
  2. Reduce heat to medium and add the 2 tablespoons of butter. Once melted, add the onion and cook 2 minutes, stirring occasionally. Add the cabbage, garlic, smoked paprika, salt, and pepper. Cook 8 to 10 minutes, stirring every couple of minutes, until wilted and edges are golden. If the pan gets dry, add 2 tablespoons of water or broth to steam for a minute.
  3. Return the sausage to the skillet, stir to combine, and heat through for 1 to 2 minutes. Serve hot.

Notes

The cabbage will shrink by about half during cooking. For extra brightness, add a splash of apple cider vinegar just before serving.
