Fresh Vegan Spring Rolls with Peanut Dipping Sauce Recipe

Ingredients
  

  • 8 to 10 rice paper wrappers (22 cm)
  • 1 cup julienned carrot
  • 1 cup julienned cucumber
  • 1 red bell pepper, sliced
  • 1 cup shredded lettuce
  • ½ cup fresh mint leaves
  • ½ cup fresh cilantro leaves
  • 2 oz thin rice vermicelli noodles, soaked and drained
  • ¼ cup natural peanut butter
  • 1 ½ tbsp soy sauce
  • 1 ½ tbsp fresh lime juice
  • 1 ½ tsp maple syrup
  • 1 tsp sriracha
  • 3 to 4 tbsp warm water

Method
 

  1. Whisk the peanut butter, soy sauce, lime juice, maple syrup, sriracha, and 3 tbsp warm water together until smooth. Add the remaining water if needed.
  2. Soak the rice noodles in hot water for 5 to 10 minutes, then drain. Slice all the vegetables into thin matchsticks and arrange them on a plate with the herbs.
  3. Dip one rice paper wrapper in warm water for about 10 seconds, then lay it on a damp towel.
  4. Place a little lettuce, noodles, vegetables, and herbs on the wrapper, fold the bottom over, fold in the sides, and roll tightly. Repeat with all wrappers and serve right away with the peanut sauce.

Notes

These rolls are best eaten right away. Leftovers will soften and stick together. If you want to prep ahead, store the fillings and sauce in the fridge and assemble the rolls just before serving.
