- Peel the mango, remove the flesh from the pit, and cut into ½-inch cubes. Halve the cucumber lengthwise, scoop out any large seeds, and slice into ¼-inch half-moons. Place both in a bowl with the torn cilantro.
- In a small bowl whisk the lime juice, fish sauce, and brown sugar until the sugar dissolves. Stir in the sliced chili.
- Pour the dressing over the mango and cucumber, add the peanuts, and toss gently to coat. Serve right away.
Notes
If you need to prepare it ahead, store the dressing, produce, and peanuts separately and toss just before serving. The salad loses crunch quickly once dressed, so it’s best eaten the day it’s made.
