- Bring a large pot of salted water to a boil. Add green beans and cook 3 to 4 minutes until bright and crisp-tender, then drain and shock in ice water.
- Melt butter in a large skillet over medium-high heat. Add mushrooms and shallot, and cook 6 to 8 minutes until golden. Add garlic and cook 1 minute.
- Stir flour into the mushroom mixture and cook 1 minute. Whisk in milk and broth gradually, bring to a simmer, and cook 3 to 4 minutes until thickened. Season with salt, pepper, and nutmeg.
- Fold the drained green beans into the sauce, then transfer to an 8x8-inch or similar baking dish.
- Bake at 375°F (190°C) for 20 minutes. Remove, scatter crispy fried onions over the top, and bake another 5 to 8 minutes until golden and bubbling. Let cool 5 minutes, then serve.
Notes
If assembling ahead, prepare through step 4 without the onions, cover, and refrigerate. Add 10 minutes to the first bake time when baking from cold, then top with onions and finish. The sauce will thicken as it cools, so the casserole will set up nicely after resting a few minutes.
